I found the most wonderful looking Seafood Recipe at the 2008 Great American Seafood cook off Site. The recipe if Pan Roasted Glazed Rockfish with Peas and Carrots, done by Chef Tafari Campbell of Maryland. The Picture makes my mouth water, I can almost smell the dish! It is a light looking mean with a easy to follow recipe and the ingredients are very easy to buy in your local Grocery Store, the only specialty item to be purchased is Prepared Veal Stock!
This recipe is also good for those who are trying to get more Fish into their weekly diets. Fish provides important Omega Fatty Oils, which are good for your heart and body. I also love that this recipe has you make your own tacos! How neat, my kids will love this and it makes it easier to try new recipe's if they can participate in the construction of the meal. And I have been seeking out a recipe to make tacos, so really this is a two for recipe!
The best thing about these recipes is that they are using local fish and items to cook with. Local fish are a sustainable resource and its local so you know it will be fresh when you buy, cook, and serve it!
